Mac OS X’s easy to use, system-wide Address Book is a great app, plus it supports the vCard format for importing and exporting.
There are a couple of ways to get your data out. You can select all the contacts and export them as a vCard, or you can adjust your preferences to automatically sync your contacts with Yahoo Mail.

Just import the vCard into Evolution. I believe any photos you have in your contacts will not be migrated.
